These are not your grandmother’s oatmeal cookies. Lacey, crispy and with hints of caramel flavor, these cookies will melt in your mouth. With certified gluten-free oats and gourmet chocolate chips you can never eat just one. Just add butter, egg and water. Makes about 3 dozen cookies.
These delectable cookies were inspired by my friend Ann Lucas who makes them in a gluten-filled version. She was kind enough to share the recipe which I converted to gluten-free so that you can enjoy them too.
Ingredients: Semi Sweet Chocolate Chips (Sugar, Cacao Beans, Cocoa Butter, Sunflower lecithin, Vanilla), Rolled Oats, Brown Sugar, Chef Janet's Gluten Free Flour Blend (Sorghum Flour, Potato Starch, Millet Flour, Brown Rice Flour, Tapioca Flour), Vanilla Powder (Dextrose and Vanilla Bean Extractives), Salt, Baking Soda, Xanthan Gum.
